Doom. Chess is a game of strategy, of which Doom is an undisputed expert. (unless you take into account all those times he was outsmarted by the likes of Johnny Storm and Ben Grimm)
I'll go with Dr. Strange, because while Doom seems better-equipped to win, he can't keep his head in the game (and Strange would be sharp enough to mess with him.)
Every time Strange moved a rook like 5-6 spaces, Doom would be thinking "That piece's range stretches all across the board, just like the accursed Richards!" Then he'd spend the rest of the game thinking more about new ways of launching the Baxter Building into outer space than about the chess game.
